Raisin-Apple Muffins

Ingredients

  • 1 cup of Cheerios or Apple Cinnamon Cheerios cereal, crushed (about 1/2 cup)

  • 1 1/4 cup of all-purpose flour

  • 1/3 cup of packed brown sugar

  • 1 teaspoon of ground cinnamon

  • 1 teaspoon of baking powder

  • 3/4 teaspoon of baking soda

  • 2/3 cup of raisins

  • 1/2 cup of applesauce

  • 1/3 cup of milk

  • 3 tablespoons of vegetable oil

  • 1 egg


Directions

  • Heat the oven to 400 degrees.

  • Grease bottoms only of 12 medium muffin cups (2.5 x 1.25 inches)

  • Mix cereal, flour, brown sugar, cinnamon, baking powder, and baking soda in a large bowl.

  • Stir in remaining ingredients just until dry ingredients are moistened.

  • Dive the batter evenly among the 12 prepared muffin cups.

  • Bake until golden brown, 18 to 22 minutes.

  • Makes 12 muffins.
