Raisin-Apple Muffins
Ingredients
1 cup of Cheerios or Apple Cinnamon Cheerios cereal, crushed (about 1/2 cup)
1 1/4 cup of all-purpose flour
1/3 cup of packed brown sugar
1 teaspoon of ground cinnamon
1 teaspoon of baking powder
3/4 teaspoon of baking soda
2/3 cup of raisins
1/2 cup of applesauce
1/3 cup of milk
3 tablespoons of vegetable oil
1 egg
Directions
Heat the oven to 400 degrees.
Grease bottoms only of 12 medium muffin cups (2.5 x 1.25 inches)
Mix cereal, flour, brown sugar, cinnamon, baking powder, and baking soda in a large bowl.
Stir in remaining ingredients just until dry ingredients are moistened.
Dive the batter evenly among the 12 prepared muffin cups.
Bake until golden brown, 18 to 22 minutes.
Makes 12 muffins.
