“Xtra-Special” Celebration Cake

Ingredients

  • 3 cups of all-purpose flour

  • 2 cups of sugar

  • 1/2 cup of cocoa

  • 2 teaspoons of baking soda

  • 1 teaspoon of salt

  • 2/3 cup of vegetable oil

  • 2 teaspoons of vinegar

  • 1 teaspoon of vanilla

  • 2 cups of cold water

TOPPINGS

  • 1 tub (16 ounces) of ready-to-spread frosting (any flavor)

    • An “Xtra-Special” surprise with a different flavor of frosting between the 2 layers

  • Small candies like M&Ms, gummy bears, sprinkles, etc.

OPTIONAL Balloon Topping

  • Pastel mint wafers, flattened gumdrops, or fruit gems

  • Shoestring licorice


Directions

  • Heat the oven to 350 degrees.

  • Grease 2 round pans, 9x1.5 inches, then dust with flour.

  • Mix flour, sugar, cocoa, baking soda, and salt in a large bowl.

  • Mix oil, vinegar, and vanilla in a small bowl.

  • Stir oil mixture and water into flour mixture real hard until well blended, about 1 minute.

  • Immediately pour batter into prepared pans, dividing evenly.

  • Bake until wooden pick inserted in center comes out clean, about 35 minutes; let cool 10 minutes.

  • Remove from pans; let cake cool completely.

  • Fill and frost cake as directed on frosting tub.

    • Use a different frosting between the two layers

    • Add small surprise candies between the two layers.

TOPPINGS

  • Have fun decorating with favorite small candies.

OPTIONAL Balloon Topping

  • Arrange wafer “balloons” on top of cake; use shoestring licorice to make balloon strings.
